MATE
Mate, Argentina’s national drink, is becoming increasingly popular. It is obtained from the leaves of holly. Mate is found in many fasting teas. Traditionally, it is prepared in a calebasse (a hollowed-out gourd vessel) and sipped with a bombilla (a type of suction tube). Mate leaves can be infused several times with boiling hot water.
